Judy Roffey – Catering Manager

Judy has over 35 years experience in the industry and is a very successful business woman.  She has worked in and managed various restaurants and cafes in Sydney and Melbourne before managing the restaurant at The Country Comfort then The Galley.  Judy built Swells Restaurant in Terrigal and operated this very successful and profitable business for 20 years. 

During her time there she also ran other businesses including the bistro at The Lakes hotel at The Entrance and was instrumental in launching and managing the New Years Eve functions on the waterfront in Terrigal.  Judy was also a committee member of the Terrigal Beach Food and Wine Fair and has a solid understanding of licensing and off site catering requirements. In her role as Catering Manager of The Cowrie Exclusive and Corporate Catering, Judy is responsible for overseeing all catering events.

Mark Allenspach - Executive Chef

Mark has over 30 Years experience, including Head Chef of his own Restaurant in Mona Vale.

Mark is Swiss trained and has had control of large kitchen and catering establishments including Bayview Golf Club at Bayview, L’espress Brasserie at Neutral Bay and catering operations in multi-national hotels.

Mark creates all catering menus and is our chef in charge of the catering kitchen.

Selena Dohnt – Wedding and Function Manager

Selena co-ordinates all functions and weddings for both the The Cowrie Restaurant and our outside catering.

She has a wealth of experience in hospitality, working in a vast variety of hospitality venues from cafes to five star restaurants.

Selena began her career in hotel management and went from there to Bilson’s restaurant as function coordinator.  

In the last five years Selena has worked on the Central Coast in functions, three of these years at The Cowrie.

Selena has an eye for detail making her perfect for specialising in weddings.
